How to cook delicious frozen shrimp meat

Ingredients
Frozen shrimp meat, 250g
Pixian Doubanjiang, as needed
Salt to taste
Oil, as needed
Sichuan peppercorns, as needed
Black pepper, to taste
Chili peppers, as needed
Ginger, as needed
Garlic, as needed
Method/Step
Thaw the frozen shrimp, remove the vein, rinse thoroughly, and drain well.
Add the shrimp to a bowl with a pinch of salt, black pepper, scallion-ginger cooking wine, cornstarch, and egg white. Mix well and marinate for 15 minutes.
Prepare the seasonings: Mince the garlic, slice the ginger, and cut the chili peppers into segments.
Heat oil in a pan over low heat, gently frying the Sichuan peppercorns until fragrant, then add chili peppers, ginger, and garlic, continuing to sauté until aromatic.
Add the Pixian doubanjiang and continue to stir-fry over low heat until the red oil is released.
Turn the heat to high, add the marinated shrimp and stir-fry until they turn white. Then, remove from heat and serve on a plate—these spicy, chewy shrimp are absolutely perfect with rice!
Important Notes
When marinating the shrimp, use just a pinch of salt, since you'll be adding Pixian doubanjiang during stir-frying.
